Oaxacan mezcal in clay

Stay at the table

A mezcal for la sobremesa: the hour after the meal when the plates are gone and the talk isn’t. It will be made in clay, the old way, by a maestro family of the Central Valleys of Oaxaca. We haven’t signed them yet. You’re reading it early.

La sobremesa

The part no one plans

La sobremesa: the hour after the meal that gets away from everyone. The plates are cleared. The conversation isn’t. Somebody tells the story again, and the pour goes around once more. This is a mezcal made for that hour.

The clay

Distilled in clay, the old way

Not steel. Clay. An olla de barro, a clay pot fired from Oaxacan earth in the style of Santa Catarina Minas, where the still is made of the same ground the agave grew in. It runs slower and harder than steel. And it makes the spirit rounder and more alive.

We say this plainly because it is the one thing we can prove today: before we can tell you a family’s name, we can tell you how the liquid is made. Clay isn’t our mood board. It’s the product.

How it’s made

An olla de barro, in the style of Santa Catarina Minas: a method we distill toward.

The lane we own

Poured for company

The great mezcals sell you a solitude: one explorer, one glass in the dark. Beautiful, and taken. Nobody planted a flag on the table. So we did.

This is a spirit for the room you gathered, the second bottle no one planned, the story someone tells twice.

The Sobremesa Ledger

Better blank than made up

Every bottle we ship will carry a ledger: batch, agave, village, method, altitude, and the family who made it, named as large as we are.

We haven’t signed a family yet, so we won’t print one. Where a name will go, the line waits. You are reading this brand before its last page is written.

For the makers

A brand worth being named by

If you make mezcal, or you know a family who does, here is our promise before we ever meet. We’ve watched brands take Oaxaca’s story and put a stranger’s face on the label. Ours stays blank until yours goes on it.

01

Credit at wordmark weight

Your name goes on the front, at the weight of ours.

02

Fair pay in writing

What you’re paid is written down, never dressed up as “fair” until it is defined and backed. Your consent is ongoing and yours to withdraw.

03

Serious operators

We’ll bottle under your certification and your NOM. We get the paperwork right.
